CANDY - When sugar is heated to a certain temperature, we get a hard sweet substance, commonly known as the hard candy. Usually, candy consists almost entirely of sugar with traces of other substances added to it. Other traces that are added are usually colors and flavorings to enhance the flavor and attractiveness of candy. 

However, keeping up with the times, sugar-free varieties have also been created. There are generally two types of candies, the first type is crystalline and the other is amorphous. A crystalline candy is not as hard as an actual crystal but has a microscopic structure arranged in a manner similar to a crystal. On the other hand, an amorphous candy has a haphazard arrangement and is softer than the former. 

The history of hard candies is closely linked to its medicinal use as a cough drop. It used to be laced with medicine and was taken to relieve cough. They were and still are used by many apothecaries which use hard candy to make their medicines palatable for kids as well as the rest of people. They are also a helpful tool to carry by diabetics and other people who suffer from hypoglycemia so that when they feel their sugar levels dropping they can quickly pop in hard candy and raise their sugar levels.

Jelly candy is a type of sweet, extremely popular amongst kids, is made up of a gelatin base, and it has a chewy consistency. The history of gelatin-based jelly candies is very long. They were sold as early as 1864 by a candy company and were named Unclaimed Babies. They are usually made up of four ingredients, first us gelatin, then sucrose, then water and lastly starch. 

Sometimes, other colorings and flavorings are added to create different styles and varieties. A popular choice is to sometimes add malic acid or citric acid to make it tart and to create a more exciting flavor profile. They are sold in all types of shapes as well. As mentioned earlier the first of its kind was a baby shape and later, bottles, bears, alphabets, worms, etc were also made. 

There are some health risks like choking with these and there is also a growing concern that they cause tooth decay. To prevent tooth decay xylitol is sometimes added to them to make them better for dental health. Thus, hard and jelly candies are popular throughout the world amongst kids and adults alike.
