TORTILLA is a popular flatbread that has its origins in Mexican cuisine. It is unleavened and is made from either wheat or maize. It was first made by the people of Mesoamerica. The oldest variety of tortillas is the one that is made from maize meal. When the 19th century was ending the first instruments to make tortillas that are called tortilla presses were invented. 

Later on, when the Europeans brought with them wheat flour to the Americas and started cultivating it, that is when wheat tortillas were born. Wheat tortillas also have other ingredients in them such as salt and any type of fat such as oil or lard. They may also contain an agent to leaven it, like baking powder. In the olden times, the corn maze for tortillas was boiled along with a softening agent like unslaked lime. This would not only soften the kernels but would also loosen the hulls. The lime used as a softening agent here was also a great source of calcium in the diet of Mexicans. These gains used to be ground on a stone saddle. 

After grinding and converting it into the consistency of a dough, small pieces would be taken and formed into flat round disks, and all of this would be done by hand. This thin round disk of dough would then be baked on an iron griddle. In contrast to this lengthy process today, the story is completely different, tortillas dough are made by sophisticated machines and then baked in a modern oven through a conveyor belt. This flatbread quickly changes its taste and becomes stale, so it is customary to buy or prepare it each day or some go as far as to buy it new for each meal.

Tortillas are the staple food of a Mexican diet and are used to scoop or wrap meat that is grilled or stewed. They may have inside them cheese, meat and a sauce, and a variety of greens. They are the most popular food not just in Mexico but also in many places around Central America. 

Thirty percent of all the baked products that are sold in America are tortillas. They are also a great source of energy, protein, calcium, and other important nutrients. Cooking it with lime has benefits that are twofold, the flatbread becomes rich in calcium, and secondly, it removes the aflatoxins from the maize.
